Mindek\u00f6zben minden elem\u00e9ben r\u00edmel arra, amit mi ma a vend\u00e9gl\u00e1t\u00e1sr\u00f3l gondolunk: egyszer\u0171bb alapanyagokb\u00f3l, szezonhoz igazodva, a term\u00e9szet ritmus\u00e1t k\u00f6vetve is lehet izgalmas, kort\u00e1rs \u00e9teleket k\u00e9sz\u00edteni.<\/span><\/p>\n<p><b><i>Eg\u00e9sz \u00e9vben szezon\u00e1lis<\/i><\/b><\/p>\n<p><span style=\"font-weight: 400;\">A k\u00e1poszta itthon eg\u00e9sz \u00e9vben rendelkez\u00e9sre \u00e1ll\u00f3 alapanyag, ez pedig k\u00fcl\u00f6n\u00f6sen \u00e9rt\u00e9kess\u00e9 teszi sz\u00e1munkra is. Mindig el\u00e9rhet\u0151, nem kell \u00e9rte messzire menni, j\u00f3l t\u00e1rolhat\u00f3, k\u00f6nnyen tart\u00f3s\u00edthat\u00f3 &#8211; azaz fenntarthat\u00f3. <\/span><\/p>\n<p><span style=\"font-weight: 400;\">Nem v\u00e9letlen, hogy a paraszti konyh\u00e1ban is mindennapos szerepl\u0151 volt egykor. Nagy- \u00e9s d\u00e9dsz\u00fcleink konyh\u00e1j\u00e1ban a h\u00fas ritka vend\u00e9g volt, a h\u00e9tk\u00f6znapokat sokkal ink\u00e1bb az ehhez hasonl\u00f3 egyszer\u0171 t\u00e9szta\u00e9telek k\u00f6r\u00edtett\u00e9k. Az alapanyagot t\u00f6bb l\u00e9p\u00e9sben dolgozunk fel. El\u0151bb f\u0151zz\u00fck, majd kr\u00e9mm\u00e9 alak\u00edtjuk, ebb\u0151l nagyon v\u00e9kony, \u00e1ttetsz\u0151 lapokat h\u00fazunk. Ezeket azt\u00e1n sz\u00e1r\u00edtjuk, \u00e9s forr\u00f3 olajban s\u00fctj\u00fck roppan\u00f3sra.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">A lapok k\u00f6z\u00f6tt pir\u00edtott \u00e9s savany\u00fa k\u00e1poszt\u00e1b\u00f3l k\u00e9sz\u00fclt kr\u00e9m kap helyett. A libazs\u00edron pir\u00edtott k\u00e1poszta m\u00e9ly, t\u00e9li \u00edz\u00e9t a savany\u00edt\u00e1s frissess\u00e9ge eg\u00e9sz\u00edti ki. Ez a kett\u0151ss\u00e9g ma konyhai rafin\u00e9ri\u00e1nak t\u0171nhet, de a paraszti konyh\u00e1ban mindig is mag\u00e1t\u00f3l \u00e9rtet\u0151d\u0151 volt, mert nemcsak finom, de az em\u00e9szt\u00e9st is k\u00f6nny\u00edti. <\/span><\/p>\n<p><span style=\"font-weight: 400;\">Az \u00e9tel tetej\u00e9re ferment\u00e1lt bors ker\u00fcl, ami l\u00e1gyabb \u00e9s arom\u00e1sabb, mint a frissen \u0151r\u00f6lt bors,\u00a0 ez egyszerre ad karaktert \u00e9s marad \u00f6sszhangban az \u00e9tel egyszer\u0171s\u00e9g\u00e9vel. A fog\u00e1s \u00edgy nagyon k\u00f6nny\u0171, izgalmas, r\u00e1ad\u00e1sul glut\u00e9nmentes is, mik\u00f6zben \u00e9lm\u00e9ny\u00e9ben teljesen visszaadja a k\u00e1poszt\u00e1s t\u00e9szta karakter\u00e9t.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Az \u00e9tel \u00f6tlet\u00e9t egy\u00e9bk\u00e9nt \u00c1ron vetette fel, a technol\u00f3giai megold\u00e1st pedig Szil\u00e1rd hozta: a z\u00f6lds\u00e9gb\u0151l k\u00e9sz\u00fclt \u00e1ttetsz\u0151, roppan\u00f3s lap olyan elj\u00e1r\u00e1sra \u00e9p\u00fcl, amit a konyha m\u00e1s fog\u00e1sokn\u00e1l m\u00e1r csiszolt, most pedig ehhez igaz\u00edtjuk a k\u00e1poszta t\u00f6bbarc\u00fa \u00edzvil\u00e1g\u00e1t.\u00a0<\/span><\/p>\n<p><b><i>Eml\u00e9kek \u0151rz\u0151je<\/i><\/b><\/p>\n<p><span style=\"font-weight: 400;\">A k\u00e1poszt\u00e1s t\u00e9szta a r\u00f3la sz\u00f3l\u00f3 besz\u00e9lget\u00e9sek miatt is fontos fog\u00e1s.
