<\/p>\nGreen bean pottage has quickly become a standout on our spring-summer menu, and we love watching our guests\u2019 curiosity being sparked. In a fine dining setting, it is incredibly rare to encounter a humble childhood favourite and a classic canteen staple.<\/p>\n

Yet at SALT, this approach is nothing new. Pottages have been a regular part of our summer menus\u2014not only because they celebrate seasonality, but because we are drawn to dishes that carry personal memories. Nostalgic staples like pasta with cabbage, scalloped potatoes and green bean pottage may seem simple at first, but refining them is a true culinary challenge: everyone carries an exact, defining memory of how they should taste.<\/p>\n
When it comes to our iteration of the green bean pottage, green and yellow string beans take center stage, charred over an open flame. Tucked beneath them lies a rhubarb-apple cream with black garlic. Once plated, the charred beans are finished off with Piedmont hazelnut oil and fresh dill, then dressed at the table with a kefir sauce flavoured with tarragon, dill and parsley. It captures everything we love in a dish: depth, light freshness, acidity, a hint of umami, and subtle, toasted nuttiness.<\/p>\n
When creating the recipe, we began with the ingredients themselves, asking: How can we reimagine this classic so it feels familiar, yet utterly surprising? We wanted the first spoonful to transport guests back to the pottages of their youth, while simultaneously delivering a fresh experience.<\/p>\n
Developing a dish is always a collaborative effort, and inspiration often comes from the most unexpected places. Originally, we planned to pair the pottage with a bone marrow sauce. But one day, Szil\u00e1rd tasted the refreshing kefir sauce that Edina had whipped up for the staff salad, and instantly realised he had to try it with the pottage. We tested the combination, it clicked immediately and the bone marrow sauce was quickly out of the picture. Discoveries like these bring extra joy, releasing the tension that builds during menu development.<\/p>\n

The spirit of shared creation defines our restaurant as much as the traditional peasant kitchen culture that continually inspires us. In our grandparents\u2019 homes, seasonality dictated what was put on the table, and vegetables played a crucial role. Vegetables are also often the stars of our show. High-quality, seasonal produce deserves to shine in its own right\u2014it is every bit as essential and valuable to us as meat or fish.<\/p>\n
The same heritage fuels our passion for preservation. We ferment, age, and pickle\u2014ancient techniques that lend incredible depth of flavour while honouring a commitment to sustainability. This dish is no exception.<\/p>\n
Served as an appetizer between the \u201ckorhely\u201d fish soup and the walnut pasta, the green bean pottage offers a refreshing pause in the middle of the menu.
