Greasy bread at SALT

Nov 2, 2026

While the majority of our menu changes seasonally, a few signature classics remain essential to the SALT experience. Greasy bread has been a cornerstone of our offering since day one. Though we have refined it over the years, its core identity remains unchanged. Our goal is to showcase a humble Hungarian staple through our own gastronomic lens.

Greasy bread is one of the simplest, yet most defining elements of Hungarian food culture. From the very beginning, chef Szilárd knew it belonged on SALT’s menu. It embodies everything we value: a deep respect for simple ingredients, traditional preservation methods, close relationships with local producers, and a genuine curiosity about the culinary heritage of the Szatmár region.

The core of the dish begins with our homemade whole-wheat bread, baked in our own kitchen and transformed into crisps. The other essential element is the cured Mangalitza jowl fat. Together with Zoltán Vári, we experiment with traditional charcuterie methods that were once standard practice in rural households.

In the town of Nyírmeggyes, the bacon is matured for six to eight months in special vessels made of loam. Loam naturally absorbs and releases moisture, creating the ideal microclimate for aging. Over these months, the bacon’s flavor grows richer and more concentrated while retaining its distinct Mangalitza character.

We have presented this dish in various forms over time, continually tweaking the garnishes, ratios, and textures. In its current rendition, the crispy bread, and long-aged bacon are paired with smoked eel and desiccated tomatoes, creating an exciting combination. Pickled acacia flowers add a bright, acidic counterpoint to the richness of the fat.

Serving the greasy bread at the start of the meal is deliberate. Country hospitality traditionally begins by sharing whatever is on hand, and we want to honor that tradition. This dish serves as our welcome—telling the story of our roots, our ingredients, and our approach to hospitality.

For our Hungarian guests, greasy bread brings a sense of nostalgia, even with our unexpected twist. For international visitors, the pairing of bread and lard proves surprisingly approachable, demonstrating how a simple dish—made with exceptional ingredients and thoughtful execution—can resonate with anyone.

Finally, while tradition might call for a shot of pálinka alongside greasy bread, we pair this opening bite with wine to gently set the course for the evening. For those choosing our non-alcoholic menu, we offer a custom-crafted beverage pairing instead.
